BBQ Wings for EvERyboDy

I LOVE, LOVE, LOVE wings.  When my dearest and I were dating, we frequented Buffalo, Wild, Wings and Weck better know as BW3's.  When we had our first kiddo we brought him along and still enjoyed those great wings.  As time went by and we added number 2 and number 3 babies, our trips there became less frequent.  When the food allergies came along, our trips became non-existent.  And I no longer made them at home either, just learning to cook a well rounded meal was a challenge.

My dearest is a meat department manager and often brings homes a good deal that I need to find a way to use in our meal plans.  Well, this week he brought home three packs of chicken drummies.  I was dreaming of the yumminess of BBQ wings, spicy sauce with the cool, creaminess of ranch dressing.  My taste buds were salivating.  Now, I wanted to share this pure joy for the mouth with my little buddies.  I saw lots of recipes and I decided to go out on my own and try to "wing-it."  Ha, ha~pun intended...so funny I am.  (sorry!)

This is what I came up with.

BBQ Wings~top eight allergen free

In a large Ziploc, combine the following ingredients:
1 cup apple cider vinegar
2 TBSP coconut oil or olive oil
1 1/2 TBSP brown sugar or molasses
1 TBSP paprika
1 TBSP garlic powder
2 tsp. sea salt
2 tsp. onion powder
2 tsp. chili powder
1 tsp. cumin
1/2 tsp. crushed red pepper

Optional:
Tabasco to taste (3 teaspoons gives you a mild taste, 1 tablespoon for spicy)
1 tsp. pepper (again, we can't do pepper)

Mix this ingredients together well.  Add your chicken.  You could do chicken breasts as well or a whole chicken.  I marinated it for about 3 hours.



To make it a bit crunchier, I mixed together my breading I use for fried chicken and fried fish.  It varies upon what I have on hand, but I can give you an idea of what I try to use.

Breading 
(even dearest who refuses gluten free stuff usually likes this coating.  Feel free to experiment.)

1/2 cup of potato flour
1/2 cup of instant potato flakes or crushed potato chips
1 cup of a gluten free flour mix or crushed rice crispies
2 tsp. sea salt
garlic powder
onion powder
Paprika



Mix well.  Use for a coating.  If you haven't coated anything before, you need to dredge the meat item in an beaten egg or milk mixture, and then place in your coating.  Since my BBQ wings were covered in a sauce, I skipped dredging the meat in a liquid and just dredge it in the coating. Sometimes you can double dredge for a thicker coating.  I did not do that this time.  I had three "I'm hungry" boys telling me they needed to eat NOW that they couldn't wait to eat.


We simply grilled the drummies on our grill.  They were good.  I like mine a little spicier then these turned out, so next time I will turn up the heat with more spicy seasonings.

The boys liked them.  My pickiest boy (of course he has no allergies) refused to try even a plain one, but the rest gobbled them up.  And so did I!
