Chocolate Chip Cookie Goodness

I have a favorite chocolate chip cookie recipe.  And it isn't from the back of the Nestle chocolate chip bag.  Ever see the episode of Friends where Monica spent days trying to figure out Phoebe's recipe?  And Phoebe mispronounces Nestle???  Cracks me up every time.  (the clip quality isn't great)  Now I am not sure where my recipe came from, but it is good, although not as funny.

When my little sweeties were unable to partake in the yummy goodness of my chocolate chip cookies, I tried numerous recipes from cookbooks and blogs.  Then, on a whim, I decided to try to convert my regular recipe, since we loved it so much.  And it was a success!  Although it took me just a bit longer Monica to figure it out.  LOL.

Here we go:

Chocolate Chip Cookies Gluten Free
 
1 ½ cup Earth Balance Soy Free Butter (room temperature)
3 eggs or 4 ½ tsp Ener G Egg Replacer
1 cup +1 TBSP brown sugar
1 cup + 1 TBSP evaporated cane sugar
1 ½ tsp Frontier vanilla or Simply Organic
4 tsp. guar gum or xanthum gum
1/2 tsp. sea salt
1 ½ tsp. Bob’s Red Mill baking soda
3 cups plus 6 TBSP GF flour (preferably Hagmann's GF or featherlight blends)
1 bag of Enjoy Life Chocolate Chips
Preheat oven to 350 degrees
Mix together butter and sugars until incorporated.  Add egg replacer.  Don’t over beat, just mix until blended.  Add in vanilla.  Gradually add salt, guar gum and baking soda.  Add flour one cup at a time.  Lastly add in chocolate chips. 
Roll balls of dough, placing them about 2 inches apart.  Bake 10-12 minutes.


 




The dough also makes great bars!  YUM!

  1. Your sweeties are blessed to have a Momma that would take the time to figure out a recipe for Chocolate Chip Cookies that they could enjoy too. Especially when it replicates your original recipe.
