Puppy Chow

One of our favorite treats before food allergies was puppy chow...I finally found a chex mix that is gluten and corn free!  Woo Hoo!  Here is the yummy recipe.  Enjoy.


Puppy Chow
*1 cup of Sunbutter or Almond butter (any nut butter of choice)
*¼ cup Earth Balance Soy Free butter or melted coconut oil
12 ounces Enjoy Life Chocolate Chips
*2-3 cups powdered sugar (if using corn free, regrind to get rid of any lumps before using)
*1 tsp vanilla (optional)
*9 cups of rice chex type cereal 

1.) Put 9 cups of cereal in a large mixing bowl.  Then put 2 cups of powdered sugar in a large gallon ziploc bag.
2.) In a sauce pan, melt sunbutter, butter, and chocolate chips until they are a smooth consistency.  Be sure to stir occasionally, scraping down the sides and bottom of pan.  When everything is melted add vanilla. Mix.
3.) Pour melted mix over cereal.  Gently stir until all cereal is coated.
4.)  Pour cereal into powder sugar bag, zip shut and shake until cereal is coated.  If necessary add more powdered sugar.
5.) Spread out on cookie sheets to “dry.”  Then store in a air tight container.

  2. Yum. I will try this. I made the most amazing gluten free pumpkin bread today. But I ate way too much of it :)
